BRUNELLO DI MONTALCINO

CARILLON

The main feature of the "Carillon" labels (Brunello and Rosso) is the Italian tricolor that, in Stephania and Jeanneth Angel intentions, wants to be an immediate reminder of the quality and excellence of "Made in Italy". The name "Carillon" reflects, however, the olfactory and gustatory musicality .....the symphony of aromas and flavors that is released when opening a fine bottle!

ANNUAL PRODUCTION: 25.000 bott.​

SOIL: tuffaceous clay, very rich in skeleton.

AVERAGE HIGH: 350 mt s.l.m.​

DENSITY FOR HECTARE: 5.500.​

TRAINING SYSTEM: bilateral and balanced cordon.

GRAPES: "big" Sangiovese, called in Montalcino "Brunello".​

PRODUCTION SYSTEM: intensive extraction in the early stages of fermentation followed by long quiescent maceration on the pomace; maximum temperature  made freely rise up to 33 ° C and maintained at high values until the racking.

AGEING: 36 months in Slavonian oak casks of 40 hl,

plus 6 months of aging in bottle.

ALCHOLIC CONTENT %: ranging from 13.5 to 14.5 depending on the year.

COLOUR: deep ruby red with garnet hues, limpid.

BOUQUET: ethereal with intense and complex bouquet.

TASTE:  full-bodied, well-structurated, very tannic and soft.

SERVING SUGGESTIONS: 18° C, in goblets created for Brunello di Montalcino wine.

FOOD MATCH: succulent dishes, red meats, game and aged cheeses.

ROSSO DI MONTALCINO

ANNUAL PRODUCTION: 20.000 bott.​

SOIL: mixed clay, very rich in skeleton.

AVERAGE HIGH: 350 mt s.l.m.​

DENSITY FOR HECTARE: 5.500.​

TRAINING SYSTEM: bilateral and balanced cordon.

GRAPES: Sangiovese.​

PRODUCTION SYSTEM: Medium-long maceration on the marc with frequent pumping and maximum temperature control to 28 ° C.

AGEING: The aging in wood lasts 12 months in new barrels of Slavonian oak. The aging in bottle lasts at least 6 months.

ALCHOLIC CONTENT %: 13.5.

COLOUR: deep ruby red with garnet hues, limpid.

BOUQUET: intense, fruity and soft.

TASTE:  full-bodied, well-structurated, tannic and soft.

SERVING SUGGESTIONS: 16° C, in goblets .

FOOD MATCH: red meats, game and semi-aged cheeses.

SECONDA STELLA A DESTRA

The Brunello di Montalcino Second Star to the Right, produced in limited quantities and only in the best years, is the pride and the result of the daily efforts of a small producer who has done and wants to do the "fruit of the vine", his passion and his beliefs.
The uniqueness of this wine wants to be remembered only by a particular label, even by its name "Second Star to the Right". These words indeed take us back to the famous phrase of the character Peter Pan: "You just think lovely wonderful thoughts, and they lift you in the air ... What you see is the Neverland .... to find it go to the Second Star to the Right and then straight on till morning. "
Front label is glued to a shaped Swarovski Diamond who wants to embellish what the eyes see first what the palate can taste afterwards. A small star to follow in the Brunello tasting Second Star to the Right.

PRODUCTION SYSTEM: The grapes of this unique Brunello stem from an exasperated selection of the grapes, both during lightening the bunches in July, both during the harvest, usually late in mid-October. The average number of clusters allocated to this Brunello is about 2 to 5. A further selection is carried out manually in the cellar in the pre-fermentation phase. The fermentation is particularly slow and long in order to allow the highest extraction of color and tannins. The entire process takes between 25 and 32 days and takes place in vats Slavonian oak wood, and the "affondatura" of the cap formed by the marc is done manually about 5 times per giorno.Il wine is passed, after the racking, immediately in casks of 3.5 hl. The roasting of the tonneau is average on the funds.

AGEING: 24 months in Slavonian oak 18 hl, Tonneaux 24 months, plus 12 months of aging in bottle.
